As far as what maps I believe should always be used for stage striking: Prima Vista, Sky Fortress Bahamut, Old Chaos Shrine
These three stages are all around great for having balance in striking and the not so obvious strike they give as well. For team wars, running these three stages along with two more, which can be discussed hopefully sooner than later, would be a good idea. I feel Kefka's Tower and Dream's End have been put off for testing long enough. Maybe we can start with these five.

I definitely agree with Prima Vista and Sky Fortress Bahamut as two of the better stages to strike with. After that, it's a little more hazy since it's hard to tell whether people are striking because of comfort or striking because they actually want an advantage... Stages like Empyreal Paradox and Order's Sanctuary are advantageous to certain characters because of the massive height and the massive sea of floor beneath the characters. I think that for striking, starting with the basic Prima/SFB/X trio (X being another very balanced stage, perhaps offering something that the other two don't) would be wonderful, then you can provide an obvious ground/wall rush oriented stage (like Pandaemonium) and an obvious air/chase oriented stage (like Crystal World or Dream's End).
If I had to put a vote forth for a set of stages to try out for balance, it would likely be the following:
Pandaemonium (original), Dream's End, Prima Vista, Sky Fortress Bahamut, Lunar Subterrane.
I know many people don't like Lunar Subterrane's uneven floor, but it's probably (in my opinion) one of the most balanced stages remaining to the game after taking out Prima and Sky Fortress.

Lunar Subterrane remains a very balanced stage but is somewhat similar to SFB. Both low ceilings and long horizontally. Although I do like the idea of combining the two, which would make striking more strategical and less predictable. This is where Old Chaos Shrine comes in.
