Hong Meiling is a youkai, though it isn't currently known which specific category she actually belongs to. She's the gatekeeper of the Scarlet Devil Mansion. She is known for her mastery of the martial arts, part of which can be seen from her movement which is performed with Shin-Kyaku (a move in Chinese martial arts).
While Hong Meiling is (very frequently) protrayed in fanon as incompetent, lazy, and uncaring, there is very few things that are canonical that suggest that she is any of the above while she's on the job.* (Although, Meiling's Hisoutensoku scenario shows her falling asleep in Patchouli's library.) In Hisoutensoku, Meiling's and Sakuya's quotes towards each other suggests that Sakuya has respect towards the mansion's gatekeeper (as opposed to fanon where she constantly belittles and abuses Meiling) and that the two has held friendly sparring matches before.
Quotes from Remilia and Meiling also shows that their relationship is very friendly and they're fighting only for fun.
Canon also suggests that Meiling is constantly holding back and would go all out if it were a formal duel.
In fanon, despite the negative characteristics, Meiling is shown as an incredibly loyal person who's proud to be Scarlet Devil Mansion's first line of defense. She trains constantly, forgoing fancy danmaku patterns in favor of pure physical strength and technique. While being weak in danmaku would put her in a severe disadvantage, her training has allowed her to be able to fight on par with most of Gensokyo's residents.
Also in fanon, she's also shown to be a generally friendly person...as long as you don't attempt to cross the gate while she's actually up, interrupt her training, or act incredibly rude. She even plays with the fairies that pass by from time to time (when Sakuya isn't looking).
Dunno if she likes white dogs.

*(There are two canon works that conflict with this: Inaba of the Moon and Inaba of the Earth and Silent Sinner in Blue.
Inaba of the Moon and Inaba of the Earth has the Eientei group simply walk past her without showing their invites to a party being held at the mansion. Meiling caught up with them and had them show it. However, she soon got bombarded with a slew of rabbits that allowed a huge mass of people to walk on in.
In Silent Sinner in Blue, Eirin got past Meiling after giving her a simple polite greeting...)
A few traits I missed but damn it, I can't get them all.

Mystia Lorelei is a little night sparrow with an egocentric personality that enjoys infusing confusion and terror into the hearts of humans using her ability: a song that creates confusion in those who hear her. Her song seems to attract nearby monsters as well. She roams a road near the Human Village that Keine tries to protect, in search of humans to frighten. She is indeed feared by the locals as people around her become blinded by darkness.
Although canonically Mystia is feared by humans living in the Human village. In fanon works, she appears to be much more carefree and less frightening. She loves to sing and is often paired up with the Prismriver Sisters, acting as the lead singer in the band. She also is depicted happily singing with a graceful voice, often carrying around a microphone.
In other fan works, she is often seen with Cirno, Rumia, and Wriggle Nightbug, making up Team 9. A team of Stage 1/2 bosses. They're all childish and not too bright but Wriggle and Mystia are the brightest(?) members of the team.
She also runs a small stand in fanworks, selling food to people who pass by and singing for them. She's also seen wearing a brown yukata with the sleeves rolled up and a apron.

Youmu is, as a gardener attached to the Saigyouji family and the bodyguard of Yuyuko Saigyouji, a swordsperson of a two-sword school of fencing.
As she has a straightforward diligent personality, she is often manipulated by those around her (especially Yuyuko).[8] For this reason, she often fails at her task, but that does not mean that she has no real power, and she particularly excels at instantaneous force and concentration power. In Immaterial and Missing Power, as literally stated by the shishou, "truth-slashing is something which you know," so she often performs tsujigiri-like moves, but Suika Ibuki pointed out that she does not think that Youmu understood her shishou's teachings.
She has strong sensitivity, and in the good ending of Imperishable Night, her human half was unable to resist the insanity-inducing effects of the true Moon, causing her to become "half-insane". She is afraid of ghost stories (...), dares, and darkness, but she is calm around phantoms since she is half phantom herself. Much further on in Ten Desires, as a result of being mistaken as a hermit, she temporarily mistook herself as being a hermit.
In fanon works, She depicted as a honest, hard-worker who is completely loyal to Yuyuko, much like her canon self. Of course, paired up with Yuyuko's aloof personality, she gets teased by her very often. Youmu is also seen as one of the more level-headed people in Gensokyo. She's incredibly patient, often preforming her duties to the very end. Whether those duties will be preformed successfully is still up in the air however...
Also in fanworks, she's often seen as friends with Sakuya and often go shopping together in the Human Village. Although, unlike Sakuya she often complains to her about how unreasonable her master is...
She's also friends with Reisen. Another servant who's probably the most normal person in Gensokyo (Ironic, considering her eyes drives people insane.)
Youmu is acquainted with many other major characters (be it from their visits to the Netherworld or Youmu's own investigations), but generally not close to them personally. Being straight forward and earnest, Youmu tends to get picked on a lot.
Because of her completely serious and straightforward attitude, making light conversation with her can get awkward at times due to her not understanding certain jokes.
Fun Fact:
Because of Youmu's spellcard "200 Yojana in 1 Slash", she is said to be capable of striking at speeds most would consider physically impossible (200 yojana can be a distance anywhere from 1,320-3,000 kilometers or 825-1,875 statute miles in length). In order to cover that kind of distance in the split-second a typical sword slash takes to execute, she would have to be capable of moving at far beyond hypersonic speed, currently defined as Mach 5 and faster. Her slowest sword slashes have been calculated to move at speeds in excess of Mach 70 (70 times the speed of sound, or 53,200 mph/85,120 km/h at sea level), fast enough to circle the entire Earth at the Equator in less than half an hour, three times the speed required to orbit the Earth (about 17,500 mph or 28,000 km/h), for reference. One doujinshi (Touhou Kaidan Seven #3) went into far too much detail trying to work out the specifics of this, determining that her theoretical top speed was approximately one quarter of the speed of light.
