For DEF-KNT she has an attack called イモータル (immortal) now I can't remember if that is a normal attack like steelguard...can't remember it in any of my JP copies.
However all attacks shown in screenshots do not show any new attacks. She is using Attack, Blitz, Thunder and Thundaga which is to be expected.

I noticed in the image on the Final Fantasy Wiki that she was attacking and dealing damage, and seemingly healing herself at the same time, like absoring a small % of the damage dealt (it was a small amount in the image compared to the damage she was doing to Caius.)

Yeah that is part of her Army of One Alpha attack. She attacks and heals at the same time.

Yeah I want to start a new game and just use Sazh and Lightning (Valkyrie) since you get them right at the beginning of the game

Yeah. If you start a new game you start afresh. As NevFx said you can start out with Sazh with that method.
