Would require model editing, that's not possible as of now. Not untill someone makes a .gmo exporter for 3DS Max/Maya or other 3D software.

If you are on Windows 7, in any folder go to Organize>Folder and Search Options and uncheck hide extensions for known file types. It should affect all your folders and you should be able to change.gmos back to .edat from there. If you are on Vista I think it's sorta same

I don't think there's a way to do that, but I'm not 100% sure.

Also, filenames for the recently released (in EU at least) Shantotto DLC:
