I believe you mean dodge punishing. :]
But yeah, it's a matter of preference between Kuja and Jecht. Jecht has a much faster ground BRV assist than Kuja, but I think their aerial BRV assists have about the same startup speed. Jecht stays out for longer if he whiffs in the air though, making him easier to punish.
I like Kuja's assist chase (and by extension, Sephiroth's assist chase with Firion, but I disgress) because it allows for more versatility if I'm punishing a far away opponent and it works in (mostly) any stage. Although I guess it doesn't matter as much with Bartz and Holy...

The thing is, you have to be more precise in the timing if u use Kuja when dodge punishing because of his small hit box, I think Jecht has wider range and therefore hits easier.
But as you said, if it does actually miss, Ject would be screwed.
Those Are really gold combos kayarine and starwave, but still... not a bartz fan XP, can stand him XDDD(no offenses to bartz fans XDDD)

I've been experimenting with Squall as an Assist, primarily because it's more fun when the Assist makes sense canonically. :P
The results are mixed, really. Squall has a much stricter timing, and he's really best when used with a ground-centric Bartz. You'll have to call him slightly earlier compared to Kuja/Jecht due to the slight start-up for Heel Crush. Unlike Jecht though, it's an instantaneous face-plant so arena isn't much of a concern, allowing you to quickly link to Solid Barrel/Blade Crash/Hellfire. In the air, Squall's good in conjunction with Ragnarok Blade, since the opponent usually tries to avoid one or the other.
Squall's ground Assist (linked from Rush Impact's ground rush) holds the enemy long enough for Holy to Flare and leads to Chase, so that's something. It's also extremely damaging, even stronger than Kuja. Again the timing is slightly stricter, since you can't call Squall immediately after the opponent hits the floor or he'll miss.
My big beef with Squall is that he has little use off an Aerial wall-rush. Heel Crush is so fast it doesn't allow Bartz to combo off it unless he's really close to the ground, so he can't be used with Slide Shooter/Ragnarok Blade/Rush Impact (2 hits).
So is Squall better than Kuja/Aerith/Jecht? Probably not, unless you really like Rush Impact. He's better than Jecht in Ultimecia's Castle/Kefka's Tower and better than Kuja in Pandaemonium, but I won't say he's the best at everything. He has his uses though.
